PrepTime : Serves : Cook Time
5 Min 6-8 30 Min
Ingredients :
For the basic mixture:
6 bread slices - cut off the edges.
1 cup cream
2 cups milk
6 tbsp sugar
1/2 cup unsalted cashew nuts & peeled almonds
a pinch of salt
1/2 tsp fine cardamom powder
For PISTACHIO Kulfi:
1/2 cup chopped unsalted pistachios
few drops green food color
For MANGO Kulfi:
1/2 cup mango pulp or thick mango juice
few drops orange food color (optional)
For ROSE Kulfi:
1/2 cup rose water & few drops pink/red food color OR 1/4 cup Roohafza/ rose concentrate
few pink/ red rose petals
Cooking instructions :
Blend all the basic ingredients except the nuts and then add the nuts & coarsely grind again (ensure you dont grind the nuts into a paste with the mixture). To make all 3 kinds of kulfis mentioned above, divide this base mix into 3 parts. To part-1, add the pistachio-kulfi ingredients. To part -2, add the mango-kulfi ingds & to part3, add the rose-kulfi indgs. Ensure that you don't go overboard with the food color - Add a drop at a time & mix well to ensure you get light colors. Pour these mixtures into kulfi molds or into ice-trays & freeze. When done, insert a toothpick into each cube of the ice-tray, remove kulfi cubes & serve.
Tips: You can make a tri-color or tri-flavor kulfi, freezing in between layers.
Garnish: Dust finely crushed nuts or dessicated coconut, or apply a fine layer of 'warak' onto it.
