Had alot of mint growing in my backyard, decided to use it, not lose it.. made a paste of it, threw in some spices and went on to replicate something I was offered at Eid in Dubai by my fav salon stylists.. This ones for you, ladies!!!

Ingredients:1. 1 kg. chicken/mutton pieces
2. 1tbsp garlic-ginger paste
3. 4 tbsp lime juice
4. 1tbsp salt
5. 1/2 bunch pudina/mint
6. 1 bunch coriander (mint & coriander in 1:2 ratio)
7. 2 tbsp dessicated coconut
8. 1 handful roasted peanuts
9. 1 tbsp coriander seeds
10. 1/2 tsp jeera/cumin
11. 5-6 peppercorns
12. 1/2 tsp haldi/turmeric pwd
13. 1/2 onion
14. 2 red chillies or 2-3 green chillies
15. 6 cloves garlic
16. 1/2 inch ginger.
17. 2 tbsp ghee/clarified butter
18. 1 large chopped onion
19. 1 inch cinnamon stick
20. 4-5 cardamoms
21. rice (about 2 cups for 3-4 ppl) - washed & drained
22. salt to taste
23. 2-3 bayleaves
24. a mix of 1 small chopped & fried onion, roasted/fried nuts & raisins, chopped coriander/cilantro and 1/4 cup lime juice
25. 3 medium potatoes - peel skin off & cut in half (optional)
26. 2-3 boiled eggs (optional)
Cooking Instructions:
Mix ingredients 1-4 and leave to marinate for 4-8 hrs. Grind ingredients 5-16 with a lil' water to a smooth paste. In the pressure cooker, heat ghee, fry onions, cinnamon stick, elaichis/cardamom and then add the ground masala lil by lil - frying well. Then add chicken pieces & potatoes and stir well, add salt, fry well for few mins, tossing around gently. Add 1.5 glasses water n wait till it boils - close n pressure cook for only 1 whistle.
Separate the water from the cooker and use this water with the water u would cook the rice in (rice should be half the quantity of total water used). Add salt n bay leaves to rice water. When rice is done, make alternate layers of rice n the chicken, rice at the bottom & top. .. for each layer sprinkle a bit of the mix described in ingredient 24 above, ending right on top. Close and steam for lil time on low flame - Enjoy!!!!
PS. Some people like to place some boiled eggs (or halves) in the layers too; Try it!
