Tomato Upama/ Semolina: A snack for my veggie friends

Tomato Upama

(A quick, easy, filling & super-nutritious b'fast or evening snack of semolina with a tangy tomato flavor to tease your taste-buds.)

Ingredients:
1 cup of suji/ semolina/ rawa/ farina
3-4 tbsp ghee/oil
1/2 tsp mustard seeds
urad daal &/or moong daal (1-2 tbsp each)
1/4 tsp jeera/cumin pwd
1/4 tsp chilli pwd or 1 chopped green chilli
a lil' pepper pwd
a sprig of curry leaves
1/4 tsp haldi/turmeric pwd
(optional slit peanuts or cashewnuts)
a pinch of garlic-ginger paste
1 cup chopped tomatoes
salt & sugar to taste
2 cups water (double of semolina)
1-2 tbsp dessicated or grated coconut
1/4 cup chopped coriander

Cooking Instructions:
Roast the semolina in the ghee/oil till light brown and set aside. Heat oil, add urad daal &/or moong daal and fry till light brown, add mustard, jeera/cumin, chilli pwd or chopped green chillies, lil' pepper pwd, curry leaves, haldi pwd (n optional slit peanuts or cashewnuts) and garlic-ginger paste. Fry well then add the tomatoes, salt & sugar (and boiled/frozen peas/ mixed vegs). Cook till tomatoes are done and then fold in the roasted semolina. Add water, let it boil then cover and simmer for 5-7 minutes or till the semolina completely absorbs the water. Open, fold in some chopped coriander & grated coconut.

WOW!!!! An easy n quick snack which kids will love as well. Time it takes - 12 mins flat!
